Biography Itza is a Food Engineer from Universidad Autonoma Metropolitana (UAM). Her PG studies, including a PGCE and a master's degree in Food Biotechnology.

She received her Ph.D. in Biotechnology and bioprocess.

Afterwards, she completed her postdoctoral research at UDLAP in the Food and Chemistry Department. It was during this time that she achieved the distinction of being recognized as a Researcher Candidate by the National Researcher System in Mexico (SNI).

Subsequently, Itza served as a lecturer at UPMP before spending five years at the Food and Development Research Centre (CIAD), where she worked as a researcher and lecturer in the Industrial Biotechnology lab. Her responsibilities included conducting research, delivering lectures, and mentoring undergraduate and postgraduate students. In 2019, she achieved the distinction of Researcher Level I from the National System of Researchers (SNI) in Mexico.

Following this, she worked as a lecturer at Tecnologico de Monterrey, teaching the module on Biomimicry and Sustainability and becoming a member of the research group known as Nutriomics.

In 2022, Itza joined RGU as TSO in Biological and Food Sciences. In this role, she provides support to students from the School of Health Sciences, School of Creative and Cultural Business, and School of Pharmacy and Life Sciences.

Itza thoroughly enjoys both teaching and conducting research. She firmly believes that every individual has the potential to be a change agent, and she values the diversity of people as it allows for the creation of different and improved approaches.
